Nothing. A logged-out visitor gets the public shell of a profile: the name, the profile picture, the cover photo, the bio line and a handful of public posts. The story tray and the highlights need a Facebook session, so there is no logged-out route to a story at all.

The person who posted it still sees a viewer, it is just the site's account instead of yours. Meta has been blocking those accounts and, in some cases, the sites themselves. Whoever posts a story can open a list of everyone who watched it. Friends and non-friends both appear, each name once, with no count of how many times you replayed it. Muting the person, unfollowing them or watching from the story bar instead of their profile changes nothing.
The airplane-mode trick has the same problem. The app records the view and sends it as soon as you are back online. Watching from a second account only swaps your name for that account's name, and Facebook increasingly links the two.
